Joe Greenwell's Artichoke Dip

I've made this at a number of knap-ins and it usually goes quickly.  The batch I made at the recent Goldendale Knap In quickly disappeared.

Ingredients:

Parmesan Cheese, maybe half a pound, grated or thinly sliced.

Artichoke hearts (not the marinated kind) chopped up.  I use two cans that are 14 ounces each.

Diced green chilies.  I use two of the small (4 oz?) cans (or one of the larger ones).  For variety I sometime substitute one can of chopped jalapenos.

Mayonnaise, maybe 3/4 cup of real mayo.

 

Preparation:

Mix everything together.  Spread into a baking dish (I use a large rectangular pyrex glass dish).

Bake at 350 degrees for about 30 minutes.

If I'm feeling artsy and the broiler is working I sometime lightly brown the top to make it look nice by putting it under the broiler for 5 minutes or so.

Serve with corn chips or whatever you want for dipping.  (It tastes good without the chips!)

 

Oh, I've learned to make a double batch at knap ins.
