SHOYU CHICKEN  - Bachelor Style

submitted by Richard Urata

This is a simple recipe for making shoyu (soy sauce) chicken.  Bachelor style of cooking.  Throw everything in a pot and forget about it for 1/2 to 1 hour.

Ingredients:

Recipe 1: Serves 3 - 4  Recipe 2: Serves 10 - 12
3 lbs  chicken thighs   10  lbs  chicken thighs
1/2  cup shoyu (soy sauce) 1 cup  shoyu (soy sauce)
1 cup water   2 cups  water
1/2  cup sugar or substitute  1 cup  sugar or substitute
1 tbsp sherry 2 tbsp  sherry
2 cloves garlic, minced      4 cloves garlic, minced
1 tbsp ginger, minced

2 tbsp  ginger, minced

2 tbsp canola oil or vegetable oil 2 tbsp canola oil or vegetable oil

Preparation:

Place the chicken thighs into a pan with the oil and brown the chicken pieces.   After all the pieces are brown, drain the oil.

NOTE:  Bachelor's style of draining oil.  With two pot holders, one for each hand, cover the pot by placing the cover slightly off centered.  This will allow a gap between the pot edge and the cover.  While holding the cover in place, tilt the pot and drain the oil into another container, like a used can that you can throw into the trash.  Do not pour the oil down the drain.

Add all the other ingredients and depending on your preference on the chicken texture, simmer for 1/2 for firm meat texture or simmer for 1 hour for loose meat texture.

Eating:

Chicken can be eaten with rice.  Also use as burrito filler.
