BERNIER'S MUNCHING PEANUT BRITTLE

Use non-stick coated cookie sheet or lightly buttered cookie sheet.

Set Microwave Oven power level on high (10)**

1. Mix 1 cup sugar and 1/2 cup white corn syrup in 1 1/2 quart container.
    a.  Microwave cook for 4 minutes.

2. Add 1 cup dry roasted unsalted peanuts.
    a. Microwave cook for 4 minutes.

3. Stir in 1 tablespoon butter and 1/4 teaspoon vanilla extract.
    a. Microwave cook for 1 1/4 minutes.
    b. Stir like HELL for 30 seconds, until foamy.
    c. While stirring, pour mixture onto buttered or non-stick cookie sheet.

5. Place cookie sheet on a rack so air can circulate and let cool for 30 minutes.

6. Loosen edges of peanut brittle with table knife then, gently, turn over.

7. Tap gently with butt end of knife and crack into pieces.

Total preparation time: 10 minutes.

Makes 1 pound of delicious peanut brittle.

** This will depend upon the power rating of your particular M/W oven. Ours is rated at 1.5 kw. Through trial and error we find that setting power to 7, works best for us with our oven (we are also at 2200' elev.).
