IRON MOUNTAIN MEAT LOAF

2 lbs. ground sirloin
3 eggs, beaten
1 cup dried bread crumbs
4 cloves minced garlic
1 red onion, chopped
2 tomatoes diced
½ cup chopped cilantro
¼ cup worcestershire sauce
1 ½ cups grated monteray jack cheese
2 tablespoons hot sauce ( adjust to taste)
½ cup brown sugar
kosher salt.
Preheat oven to 350 degreesF. Mix all ingredients in a large bowl. Place mixture in a greased loaf pan. Bake for 7 5 minutes at 350 degrees, then increase heat to 425 for 15 minutes or until loaf is firm.
