What the Doctor Ordered - Smoked Salmon

Ingredients:

Fresh caught Pink Salmon (locally known as 'humpies'), from the waters just off the northern tip of Whidbey Island, WA.  Caught within minutes of smoking by members of the PSK while attending the Knap-in.

Immediately clean and filet the salmon while having a fellow knapper lite the Smoker and soak the wood chips (alder, cherry. apple or whatever is on hand)
