I was introduced to this recipe at the 2009 Ft Knapadonia Knap-in by Master Grillologist Dr. Joe Higgins. It was undoubtably the best the best salmon I've ever had!
Ingredients: Fresh caught Pink Salmon (locally known as 'humpies'), from the waters just off the northern tip of Whidbey Island, WA. Caught within minutes of grilling by members of the PSK attending the Knap-in. Immediately clean and filet the salmon while having a fellow knapper lite the charcoal and soak the wood chips (alder, cherry. apple or whatever is on hand) Once the salmon are cleaned and filleted, coated with butter Sprinkle with salt and pepper Place on grill and cook just until done completely through (cook times vary with grill temp/amount of charcoal) Remove from grill, garnish with lemon slices and serve immediately. Overheard from knapper 'It doesn't get any better than this!'
